Fortunately the 2 jaguars take turns attacking, so you don't have to fight both at once, and they attack then retreat so there are brief pauses in the fight so you can regroup. There's also room to maneuver, so try not to let them corner Lara. You may want to use a fire arrow when the jaguar first appears, since it takes a few seconds to get close to Lara. Just make sure Lara isn't standing in the area affected by the fire or she'll take damage too.
Then follow up with regular arrows whenever you have the opportunity.
When one of the big cats lunges, tap Drop/Roll (C/Circle/B) to evade.
After a while the cat that's attacking will disappear through one of the raised openings.
Then you'll have a few moments to craft arrows and heal by pressing F1 on the keyboard or holding L1/LB on the controller then pressing X/A. (You can also heal on the run if necessary.) If you're desperate, there are several red berry bushes scattered around the arena to replenish your health supplies. There are also wood and feathers, though you won't have a much time to make arrows.
As long as you manage to defend yourself for a while, an interactive cutscene or quick time event (QTE) kicks in. One of the jaguars tackles Lara and she holds it off by wedging her bow's grip in its mouth. When you see the prompt, quickly alternate pressing A and D on the keyboard or wiggle the left stick from side to side to fend off the attack.
Lara will then stab the jaguar with her knife. When the first jaguar is dead, its mate approaches Lara, assesses its foe, and decides not to fight. It then drags its mate off into the trees.
